Is the vanilla braid recipe proprietary? My students really want to make them this trimester!

It’s just a laminated (croissant/puff) dough that we cut into strips, braid, and then brush with a vanilla glaze. It’d be a great class project!

I bought that very expensive flour and didn’t see much difference in my pizza dough. I generally make big batches and freeze individual balls, and the freezing process makes the dough much easier to handle. The dough is not overly tender, but it is chewy enough for me and crisps up very well.

I’m going to be saying more in the near future (I need to do some more testing/research), and there’s more than one variable at play, but the uber-fine ground means that the crust is more stretchy, chewy, and tender.
