Pie edging: cut, not pressed, right? (presumably one still calls it crimping because what *other* word would you use for that, though?) I would love to know how that particular look was accomplished…

Press both top and bottom crusts together, snip strips all around the edge of the pie. Select your first two strips and separate them a little, then fold the two strips on either side of your selected ones down crossing over in a V around your selected ones, pressing the point of the V together. Continue around the pie until finished. Brush with egg wash and bake.
