I’m never heard of fromage blanc and am intrigued by your idea of mixing it into pesto as a spaghetti sauce. . How easy is it to find in US supermarket cheese departments?

I’ve never seen it in any stores (never looked for it either), but I think you could get the same effect by mashing some ricotta and cream cheese together.
